Watermelon and Feta Salad

This salad is perfect on a warm day, as a side to grilled protein, or as a light and functional dish during detox or preconception care.

Watermelon is ultra-hydrating, packed with vitamin C and lycopene, which supports skin health and helps combat oxidative stress.

  • Feta cheese provides a good dose of calcium and protein, and its saltiness pairs beautifully with the sweetness of the melon — helping to support electrolyte balance.

  • Mint supports digestion and offers antimicrobial properties, while red onion adds quercetin, a powerful antioxidant.

  • Lime juice helps alkalise the body and provides a vitamin C boost, and olive oil supports healthy fat intake and nutrient absorption.

Colour and Flavour - What a Combo


Ingredients

For the salad:

  • 4 cups watermelon, cut into 2–3 cm cubes or balled

  • 150g good quality sheep or goat feta, crumbled or cut into small cubes

  • ½ red onion, finely sliced

  • Kiwi fruit, sliced

  • 2 apricots, quartered

  • 1 small handful fresh mint leaves, torn

  • Optional: 1 small Lebanese cucumber, sliced

  • Optional: 1 tbsp pumpkin seeds or sunflower seeds, toasted

For the lime dressing:

  • Juice of 1 lime

  • 1 tbsp extra virgin olive oil

  • 1 tsp honey or maple syrup

  • Pinch of sea salt and black pepper


In a large bowl, gently combine the watermelon, feta, red onion, mint, fruit and cucumber if using.

  1. Whisk together all dressing ingredients until well combined.

  2. Drizzle the dressing over the salad just before serving.

  3. Sprinkle with toasted seeds for extra crunch and nutrition, if desired.
