Ginger Soda

Why ginger soda?

Unlike commercial soft drinks, this homemade version contains no refined sugar, no artificial colours or flavours, and offers gentle probiotic benefits if naturally fermented. You can enjoy it as-is or lightly carbonate it for a fizzy twist.

Ingredients

  • 1½ tbsp freshly grated ginger root (or more for extra kick)

  • Zest of ½ a lemon

  • Juice of 1 lemon

  • 2 tbsp raw honey or maple syrup (to taste)

  • 3 cups filtered still or sparkling water

  • Optional: pinch of sea salt or 1 tbsp apple cider vinegar for added minerals and digestive support

  • Optional: fresh mint leaves for garnish


  1. Infuse the ginger: Place the grated ginger, lemon zest, and honey/maple syrup into a small saucepan with ½ cup of water. Simmer gently for 5–10 minutes, then remove from heat and allow to steep and cool.

  2. Strain: Once cool, strain the liquid through a fine mesh sieve to remove ginger pulp and zest.

  3. Mix it up: In a jug, combine the ginger syrup with the lemon juice, remaining water (still or sparkling), and apple cider vinegar or salt if using.

  4. Serve: Pour over ice into 4 glasses and garnish with mint if desired.
